This one has been on the 52 things board for a while now and thanks to Tik Tik, the kid lead the way on deciding to make it. We deviated a bit from the recipes and the Tik Tok video to change up the amount of beans and to add a bit more flavour.
The recipes are all similar: corn, beans, bell pepper, tomato, onion, and an assortment of spices. Here’s what we put in ours:
The Main Stuff
2 cans of corn
1 can of black beans
1 chopped bell pepper (any colour)
1 chopped large tomato
1 chopped red onion
Chopped cilantro (*)
Dressing
(Honestly this varies based on who in the family is making it!)
Mix this altogether in a bowl or big measuring cup – play around with different seasonings to match what your family likes!)
1/4 cup Olive oil
2 tablespoons of white or cider vinegar
1 or 2 tsp chilli powder
1 tsp Paprika
1 tsp garlic powder
1/2 tsp ground cumin
Salt & Pepper to taste.
Combine the corn & bean mixture and the dressing a large bowl and let it sit in the fridge for a while to let the flavours blend. Serve with tortilla chips. It’s pretty much a meal on its own.
* for the cilantro. We are a split household on people who enjoy cilantro vs those who 100% do not enjoy cilantro. As a compromise we split the recipe into two bowls and add the cilantro to one of the bowls.
