For week two of 52 weeks of new things in 2022, we switch away from the cleaning and organizing of week one to something a bit more fun.
This year I was lucky enough to be a winner in the Okanagan Spirits Laird of Fintry lottery. Only a limited amount is bottled each year so a lottery system in place to be able to purchase.
I’ll admit I’m not a huge fan of whisky on its own so decided to find a good mixed drink to enjoy some our Laird of Fintry. Given the current state of Covid in the world, a drink called Penicillin seemed appropriate.
How to Make the Penicillin (two servings)
3 oz whisky
1/5 ounce lemon juice
2 ounces of ginger/honey syrup
Fill a shaker with ice and add the ingredients. Shake and then pour into two glasses with ice. Serve!
Some recipes I looked at also had an additional 1/2 oz of whiskey added to the glass, or garnishes like candies ginger or springs of rosemary. Put whatever flair you want in it!
How to Make Honey Ginger Syrup
Combine: 1 cup honey, sliced fresh ginger (about 1/2 cup), 1 cup of water in a saucepan, bring to a boil and then let it simmer (about 20 minutes) until the ginger is soft and the flavour has infused into the honey. Strain and store in a glass jar.
