Buttermilk Banana Whatever Ice Cream

This easy to make ice cream has four ingredients: buttermilk, simple syrup, a banana and a cup of whatever you want.

Summer is the best time for ice cream, especially when you can make it yourself with the fresh fruit that is everywhere! Our raspberry plants have finally started to really produce so my first shot at this ice cream used fresh picked berries and it was a success!

Here’s what you need:

  • 1 cup of buttermilk
  • 3/4 cup of simple syrup
  • 1 ripe banana, sliced
  • 1 cup of a soft fruit or berry (like raspberry, peaches, or strawberries)

What to do:

Combine all four of your ingredients in a blender and puree. Pour into a bowl (or leave in the blender) and put it in the fridge overnight or until really cold.
When you are ready to make the ice cream, stir the mixture and pour into your ice cream maker, turn it on and let the maker do its thing!

A few notes, you can use a frozen banana instead of fresh if you want, the banana flavour might be more pronounced. You can also use frozen berries/fruit, just let them thaw a bit and drain off the excess liquid otherwise your ice cream will be pretty watery.

Simple Syrup recipe: this is possibly the easiest thing to make and store in your fridge for this recipe and for many mixed drinks and cocktails. It’s a 1 to 1 mixture of sugar and water. I usually do 1 cup of granulated sugar and 1 cup of water. Combine the two in a sauce pan and simmer until the sugar is fully combined. Let it cool and store in a sealed jar in your fridge.
