Things To Make: Apple Spinach Salad

There are a lot of great things about Kelowna in the summer: the lake, long days, and the temperature to name a few. But the best thing has got to be the abundance of fresh fruit and vegetables.

We recently ended up with a huge bag of spinach so decided to play with that and build an awesome summer lunch salad. We combined spinach, an apple, some thinly sliced red onion and a handful of blueberries with our favourite maple vinaigrette for an amazing bowl of goodness.

To make the dressing you need:

  • 1/3 cup of apple cider vinegar
  • 2/3 cup of olive oil
  • 1 tbsp Dijon mustard
  • 2 tbsp pure maple syrup (use the good stuff for this!)
  • Salt and Pepper to taste

I mix all these ingredients in a jam jar – throw everything in, put the lid on and shake. Check to make sure your mustard has mixed in, you might need to give it a quick stir.

Put your spinach, as much onion as you want (I go pretty light on the onion but definitely don’t leave it out), a sliced apple and a handful of blueberries into a bowl and lightly drizzle with the vinaigrette. Put the rest of the vinaigrette in the fridge for your next salad. This combo works really well with some protein as well, add some roasted chicken or turkey, or a selection of roasted nuts (pecans or walnuts are amazing in this salad).
